Breakfast Burrito

Picture this: a steaming hot breakfast burrito, fresh off the griddle, oozing with gooey melted cheese, fluffy scrambled eggs, and the tasty meat of your choice. But what sets this burrito apart is the star of the show, the Pueblo green chile that brings a whole new dimension of flavor to your morning meal.

With every bite, you're greeted with the smoky, slightly tangy, and pleasantly spicy notes of the Pueblo green chile. It's like a flavor explosion in your mouth, waking up your taste buds and giving your morning the kickstart it deserves.

The Pueblo green chile, which has been carefully roasted and peeled, adds not just a touch of heat but a depth of flavor that elevates the entire burrito. It's the perfect balance of spicy and savory, creating a harmonious dance of tastes that make every bite a delight.

Breakfast Burrito (makes 6)

Ingredients

  • 2 large potatoes, peeled and grated

  • 1 lb ground sausage, (or bacon or chorizo...your choice)

  • 6 eggs, beaten

  • 2 tbsp olive oil

  • Salt and Pepper to taste

  • 1/2 cup of chopped onion

  • 6 large flour tortillas

  • 2 cups cheddar cheese, grated

  • 2-3 diced Pueblo green chiles

Instructions:

In a large skillet, brown sausage and onions over medium heat until cooked through, about 5 minutes. Remove from the skillet and set aside.

 

In the same skillet add in the eggs and season with salt and pepper. Scramble the eggs until cooked through. Once cooked remove from skillet and set aside along with sausage.

In the same pan, add olive oil and bring heat to medium/high. Add in the potatoes, spreading out evenly on the surface of the skillet. Season with salt and pepper. Cook until the potatoes are slightly crispy and cooked through. Add in the sausage and eggs and stir until the mixture is nicely combined and remove from heat.

 

Working with one tortilla at a time, spoon on a portion of the egg and sausage mixture, top with grated cheese and chopped green chiles, and carefully roll up the burritos, tucking in the corners. Repeat with remaining tortillas.  You can serve them as they are, as a "hand-held" breakfast treat, or smother them with our tasty green chile sauce.

Chile Hot Dog

Elevate the iconic Chicago-style hot dog by adding a zesty green Chile relish as a topping. This will bring a smoky and slightly spicy kick to this classic “tube steak”, balancing the coolness of the pickle and tomato.

Chicago Vinny's Green Chile

Pueblo Green Chile Stew, also known as Pueblo Green Chile, is a popular and flavorful Southwestern dish that originates from Pueblo, Colorado, and the surrounding regions. It is a regional specialty and a beloved comfort food for many in the area.  And Chicago Vinny is bringing it to Chicagoland!

  • Pueblo Green Chile Stew typically has a rich, vibrant green color due to the main ingredient, green chiles. 

  • The dominant flavor in this stew is the smoky, slightly spicy, and earthy taste of roasted green chiles. Pueblo green chiles are known for their unique and robust flavor, which sets this stew apart from other chili dishes.

  • The stew often has a mild to moderate level of spiciness, depending on the type of green chiles used and personal preferences.

  • The addition of other ingredients, such as pork, onions, and spices, contributes to a well-balanced and savory taste.

Green Chile Appetizer 

Ingredients:

  • 4-6 large green chiles (our Pueblo or Anaheim chiles)

  • 2-3 cloves of garlic (finely chopped)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

 

Instructions:

  1. Rehydrate 4-6 our our freeze dried chiles by placing them in a pot of cold water.

  2. After about 10 minutes, remove the stem and seeds and then dice the chiles.

  3. Put the diced chiles in a bowl and add 2 tablespoons of olive oil, add the chopped garlic, and salt and pepper to taste.​

  4. Transfer to a serving dish, and then let rest in the refrigerator overnight.  Place a generous spoonful on top of a slice of Asiago cheese, on a crispy cracker.

Green Chile Appetizer


The combination of chopped Pueblo green chile, garlic, and olive oil creates a tantalizing dip that's perfect for tortilla chips, crispy nachos, or even warm, freshly baked bread.

Or, as we show in the picture on the pic below, on top of a slice of Asiago, on your favorite cracker.
